Hibernal is a variety that represents the absolute pinnacle among modern vines. If you are looking for a plant that is virtually maintenance-free and at the same time provides you with grapes for producing wine that rivals world-famous varieties, Hibernal is the right choice. It combines incredible resistance with a complex and elegant aroma, making it rightly considered a jewel of organic viticulture.
Its greatest advantage is its exceptional resistance. As a top PIWI variety, Hibernal has an innate high resistance to downy mildew, powdery mildew, and gray mold. For you, this means cultivation with minimal or even no need for chemical spraying. In addition, its name "Hibernal" (derived from the Latin "winter") perfectly captures its second superpower – excellent frost resistance down to -25 °C. Thanks to this, it thrives even in colder and more remote areas where growing other noble varieties would be too risky.
However, the real magic of Hibernal is revealed after harvest. It ripens later, in the first half of October, which gives it enough time to develop a rich palette of aromatic substances. The wine made from it is unmistakable, full-bodied and fresh, with an intense and captivating aroma that is strikingly reminiscent of the popular Sauvignon Blanc. Expect an explosion of blackcurrant, gooseberry, freshly cut grass and nettle tones, complemented by notes of grapefruit and exotic fruit. The taste is supported by a distinctive, lively acidity that gives the wine sparkle and longevity, making it the perfect accompaniment to food.
Although it requires a sunny location to achieve the best quality, its cultivation is problem-free thanks to its strong growth and regular fertility. It is the ideal vine for anyone who does not want to compromise between easy cultivation and top quality of the final product.
