Rubus idaeus (raspberry) is a deciduous shrub of the Rosaceae family, native to the temperate zone of the northern hemisphere. Botanically, it is characterized by a perennial root system and a biennial cycle of shoots, with the fruit usually being a red aggregate of drupes. Unlike blackberries, when ripe, it separates easily from the receptacle, leaving it hollow inside. Nutritionally, the fruit is valued for its low energy content and high fiber, manganese, and vitamin C content. Its phytochemical profile is dominated by a high concentration of ellagic acid, which, together with anthocyanins and flavonoids, provides strong antioxidant and antimicrobial activity.
